Butternut bread rolls



At last, some progress on bread making....There is one company here, Glutagon which makes ready sliced gluten free bread which is worth eating. Two types of gluten free bread are offered: Brown rice & buckwheat and Seed loaf which are not bad [if expensive] but I just can't get a regular supply. I tried using Orgran bread mix, which is also expensive but found I couldn't get a regular supply of that either. Supermarkets are not my favourite places [even if I can skip half their aisles] so I gave up trailing around trying to find Orgran and ordered 25kg of Gluten Free Brown rice & millet flour online. I made bread with it and wasn't impressed: it just doesn't taste remotely like bread, hardly surprising when the recommended recipe contains so much oil, milk, eggs and sugar. Unfortunately it also contains bicarbonate of soda and yeast inhibitors which means it won't work mixed with other gluten free flours in any yeast recipes. Its does work well for cakes, muffins and other baked goods - which gives a clue why so many are featured here: its 25g of guilt weighing on my conscience [and my bank statement]

I finally found some xanthum gum for sale and made a flour mix using sorghum flour [finally found this aswell], brown rice flour and tapioca flour. I've given up on bread mixes made with bicarbonate of soda: to me, bread made with yeast tastes better and lighter and doesn't require so much oil and eggs. I made these rolls with cooked butternut squash, which gave a good texture, helped along with buttermilk, and they worked out quite well -they even taste quite good

Fascinated by the idea of butternut rolls - like potato bread only more orange ;-) I'm going to see if I can find a non GF recipe for these or something similar. Thanks!
