Many thanks to Kate at Gluten Free Gobsmacked for sharing this recipe: the results were delicious! I think it would be even more fabulous if the wonderful Valpiform pastry mix was used: sadly, it is not available here. I used Enticerice self-raising self-binding rice flour but also added the xanthan gum stipulated in the recipe and tapioca flour. Sweet rice flour is not available here so I just doubled up on the regular gluten free rice flour. It's a special occasion kind of recipe and it is best to keep the croissants small as it is easier to shape them.
